2lb Sweet Potatoes or Yams - peeled an cut into 1/2" disks
3 oz Butter - melted
1/2C Brown Sugar
2T Lemon Juice - juice of 1/2 a lemon
1/2C Orange juice
1T Cinnamon

Directions:
Directions:
1. Preaheat oven to 350
2. Microwave the sweet potato disks - for 5-8 minutes until softened but still somewhat firm. Arrange the rounds in an oven proof dish.
3. Combine the melted butter, orange juice, lemon juice and brown sugar in a bowl
4. Drizzle the melted butter mixture over the sweet potatoes
5. Bake for 30 minutes, sprinkle with cinnamon and bake another 30 minutes until the melted butter mixture has darkened and thickened and the potatoes are soft. .
