2 cans (15 oz each) cream style corn
1 can (15 oz) whole kernel corn, drained
3 large eggs
1/2 cup sugar
1 cup (2 sticks) butter, melted
16 oz sour cream
2 boxes (8.5 oz each) corn muffin mix (recommend Jiffy brand)

Directions:
Directions:
Mix all ingredients together in a large bowl. Pour mixture into a 9x13-inch baking dish (you can lightly grease the dish if desired, but it isn't necessary). Bake at 375º for 45 minutes.

This is a great recipe when it's hot, but can also be served cold, too.

A co-worker brought this casserole to work during one of our holiday get-togethers at the office (you know, the luncheons where everyone brings in their own favorite!) and no one could get enough of it. I have been making Cornbread Casserole during the holidays ever since; Even brought it to a picnic or two! I can't tell you times I have been asked for the recipe. It is so quick and easy to make, too (that sure doesn't diminish the taste though!)
