6 medium tomatoes, sliced
1/4 lb. feta cheese, crumbled
1 small onion, thinly sliced
1- 3 1/2 oz. can pitted, ripe olives, drained & sliced
1/2 C olive oil
1/2 C red wine vinegar
2T minced parsley
4t sugar
1/2 t basil
salt & pepper
lettuce leaves

Directions:

2 1/2 hours before serving or early in the day

Place tomato slices, feta cheese, onion & olives in 13"x9" baking dish, set aside.

In small bowl, mix olive oil, vinegar, parsley, sugar, basil, salt & pepper. Pour dressing over tomato mixture. With rubber spatula, gently lift tomato slices to coat w/ dressing. Cover dish & refrigerate at least 2 hours to blend flavors.

To serve:
Line large platter w/ lettuce leaves. Arrange tomato mixture on lettuce.
