One 8" pie shell
salt
pepper
3/4 cup grated cheese
4 eggs
1/3 tsp nutmeg
1/3 tsp cayenne
2 cups milk
6 strips bacon

Directions:
Directions:
Beat eggs with milk and seasoning. Chop and fry bacon crisp. Reserve some for garnish. Add to egg mixture. Add cheese. Pour into pie shell. Bake at 450º for 10 minutes. Turn oven down to 300º for 40 minute longer (or until set). Garnish with remaining bacon and parsley. Serve with hot rolls and a tossed salad.

I had never heard the word quiche when I started to make this pie. This is the very first quiche I had ever tasted.
