3 cups flour
2 tsp baking powder
1 tsp baking soda
1 tsp salt
4 eggs
3 cups sugar
1 1/4 cup oil
1 tsp almond extract
3 cups grated zucchini
1 cup ground almonds
1 1/2 cup icing sugar
2 T milk
1/4 tsp almond extract
1/4 cup toasted slivered almonds

Directions:

Grease 10" tube pan. Combine dry ingredients. Beat eggs until thick and light coloured. Gradually add sugar. Stir in oil and extract. Blend in dry ingredients. Stir in zucchini and almonds. Bake at 350º for 1 hour and 15 minutes. Combine icing sugar, milk, extract and glaze cake. Garnish with toasted almonds.

You can cut both the oil and sugar in half and the cake is still delicious.
