Pastry for 1 crust pie (9 inch)
3 cups sliced rhubarb
1 cup sugar
3 T flour
dash salt
2 eggs, beaten
2 T milk
1 T butter

Directions:
Directions:
Line pie plate with pastry. Mix rhubarb, sugar, flour and salt. Combine beaten eggs and milk with rhubarb mixture. Turn into pie shell and dot with butter. Bake at 450º for 19 minutes. Turn oven down to 350º and continue baking until rhubarb is tender and custard is set (35-40 minutes).
