2 eggs
1 tsp sugar
1 tsp salt
1 cup milk
1 cup flour
1 tsp vanilla

Directions:

Beat eggs slightly with sugar and salt. Add remaining ingredients. Beat only until smooth. If too thick the rosettes will get soft. Let batter sit for a while before making. Dip rosette iron in dough and then in hot fat. Traditionally you can use shortening or lard. May use oil.

If the rosettes blister it means the eggs have been beaten too much. If rosettes drop off the iron is not deep enough in the fat. Wipe excess fat off of iron periodically.

Dust rosettes with sugar - either powdered or granular.
