1 dozen eggs ( separated)
1 large can whole green chilies
3 cups shredded Monterrey jack and cheddar cheese
garlic salt
seasoned salt
pepper
non-stick spray

Directions:
Directions:
1. whip egg whites until frothy ( not meringue)
2. gently blend in egg yolks, salts and pepper
3. split chilies and scrape out seeds
4. spray 9 x 13 casserole dish with not stick spray
5. Lay a layer of flat chilies into dish
6. Scoop 1/2 of egg over chilies
7. Sprinkle 1/2 of cheese over egg.
8. Repeat the 3 layers
9. Bake at 375º for 20 minutes
10. Cut into squares and serve.
