2 Halibut Filets - cut into 3 4 pieces each
1lb Crab Claws - or Crab Legs or
2 Lobster Tails, shell removed cut into large chunks
1lb Shelled Prawns
16 Clams
16 Mussels
1 lb Scallops (optional - reduce Halibut and Prawns by 1/2 lb each)

2C Onion - chopped (2 onions)
½ C Green Pepper - chopped (1 Green Pepper)
12 cloves Garlic - chopped
½C Olive Oil
1 280z tin Diced Italian Tomatoes
1 6 0z tin Tomato Paste - Italiam
2C Red Wine
1 C Parsley - chopped
½ C Basil - fresh, chopped
¼ C Oregano - fresh chopped
1t Salt
1T Pepper - freshly ground

Directions:
Directions:
1. Combine the onion, green pepper and garlic with the olive oil in a large Dutch Oven and cook gently over a low heat for 10 minutes, stirring occasionally.
2. Add the tomatoes, tomato paste, wine, 1/2 C of the parsley, and all of the seasonings. Bring to a very gentle boil, reduce heat, cover and let simmer 20 minutes.
3. Add the halibut, clams or lobster, and prawns and simmer for 20 minutes
4. Scrub the clams and mussels with a stiff brush under cold water and remove the "beards". Add the clams and mussels to the pot and simmer for 10 minutes.
5. Serve in bowls and sprinkle remaining parsley on bowls.

This is great served with Crostini - see recipe. As for the fish - there is probably too much on this list - pick and choose from the list based on what is available to you.
Also - this recipe takes longer than anticipated - I made it for Bob and Dallas and then for Mary's birthday - so I would say 2.5 hours minimum. It really goes well with Praline and Orange Salad - and the bread or crostini is a must.
