2 Heads Garlic (about 20 cloves) peeled
1/4 C Rosemary - fresh, chopped
2t Salt
2T Pepper - freshly ground
2T Chili Powder
1/4 C Olive Oil
2 Pork Tenderloin
1 Tin Beef Broth
1/4 C Red Wine
2T Corn Starch w water

Directions:
Directions:
1. Process garlic, rosemary, salt, pepper, chili powder in a blender or food procesor. With motor running slowly pour in olive oil until well blended.
2. Place pork in a roasting pan and coat with garlic mixture. Cover, place in refrigerator or 2 hours.
3. Roast at 400º F for 15 minutes, then reduce oven to 325º and continue to roast for 1 hour or, until meat thermometer inserted in thickest part of the tenderloin measures 170º.
4. Remove from oven, cover with foil and let stand 10 minutes.
5. While the pork is setting, place roasting pan with juices on a high heat, stir in the beef broth and red wine, reduce and then thicken with the corn starch mixture.
