1 large onion, peeld and thinly sliced
1-2 large tomatoes. coarsely chopped
2 cloves of garlic minced
2 Tbl. olive oil ( or more if needed)
1 cup rice (uncooked)
1 cup water
1 chicken bouillon cube
1 -2 Tbl wine or balsamic vinegar
3/4 cup grated Parmesan or Romano cheese

Directions:
Saute onion and tomatoes and garlic on medium heat in olive oil. Add rice and cook about 2 more minutes, allowing rice to absorb most of the oil. Add water, bouillon cube (or can substitute 1 can of chicken broth) and vinegar. Cover, lower heat and allow rice to cook about 20 minutes. Uncover, take pann of heat and add grated cheese. Toss to melt. Serve.

This is a family favorite of mine. I dont know if I ever made for Cooking Club but it is so popular in the summer I had ti include it. Sometimes I cook slices sausage or chicken pieces with the vegetables to make it a meatier dish.
