Ingredients: Remoulade: 2 large egg yolks 1 tablespoon Lemon juice 2 tablespoons Shallots, chopped 1 cup Vegetable oil (will need additional 1C oil for cooking) 3 tablespoons Chopped Cilantro 1 tablespoon Cumin seeds, ground and toasted 1 teaspoon Cayenne pepper Salt and pepper to taste
Crab Cakes: 1 cup Bread crumbs, toasted 2 tablespoons Chopped parsley 1 pound Crabmeat, cleaned (picked over for shells) ¼ cup Red bell pepper, fine dice 2 Jalapenos, seeded and chopped 3 tablespoons chopped chives 1 tablespoon Lime juice 2 tablespoon Cilantro, chopped

Whisk together the egg yolks, lemon juice and shallots in a medium bowl until frothy. Slowly drizzle in 1 cup vegetable oil while whisking with a hand-held blender or a whisk until it forms a thick mayonnaise consistency. Fold in the chopped cilantro, ground cumin and cayenne pepper and season with salt and pepper. Keep refrigerated until ready to use because it contains raw egg.
Crab cakes:
Toss together the toasted breadcrumbs and parsley in a small bowl and set aside. Place the crab in a medium bowl. Fold in the red bell pepper, jalapeno, chives, and lime juice; season with salt and pepper. Fold in 3 tablespoons of remoulade and ¼ cup of the breadcrumbs. Divide the crab mixture into 30 equal portions and form into round 1-inch thick patties and then coat the crab patties with remaining breadcrumbs. In a hot, nonstick pan or well-oiled cast iron skillet, cook the crab cakes in the remaining vegetable oil for 2 to 3 minutes on each side or until golden brown and crispy. Serve hot with a dollop of the remoulade and sprinkle with the julienned cilantro. |

Notes: *Be careful with those raw eggs!! They can carry the salmonella bacteria. For an adult, salmonella poisoning can mean several days of nasty flu-like symptoms. In children, elderly, and persons with compromised immune systems, salmonella poisoning can be fatal.
