2 pounds (50­-60) medium fresh mushrooms
2 cloves Garlic
1 cup Red wine Vinegar
1 cup Water
½ cup Olive oil
½ cup Vegetable Oil
1 Bay Leaf
1 teaspoon Salt
2 tablespoons Whole black peppercorns
Snipped Parsley for garnish

Directions:
Directions:
Clean mushrooms and set aside.

For marinade:
Flatten garlic on cutting board with knife.
Combine all ingredients except parsley in Dutch oven.
Bring to a boil; reduce heat and simmer 5 minutes.
Add mushrooms and simmer, uncovered, 10 minutes.
Remove from heat and let stand until cooled slightly (approximately 10 minutes).
Transfer mushrooms and marinade to container; cover and refrigerate until ready to serve.

To serve:
Drain marinade and transfer mushrooms to serving dish. Sprinkle with fresh parsley.
