4 med size zucchini
1/4 cup bread crumbs
6 cherry tomatoes, split in half
16 mozzarella cheese balls (or shredded mozzarella, if not
available
chopped basil (for decoration)
2 Tbsp olive oil
1 clove garlic chopped

Directions:
Directions:
Split zucchini in half and scoop out seeds leaving a small amount
of flesh part. Cut a small strip off skin side so zucchini will
sit upright.
Mix olive oil and garlic and coat inside of each zucchini half.
Place three halves of tomatoes in each half, leaving space
between for cheese.
Sprinkle with bread crumbs.
Bake at 375 degrees for 12-15 minutes.
Remove from oven and place 4 mozzarella balls in half, spacing
between tomatoes. Place under broiler for 3-5 minutes until
cheese is melted.
Garnish with basil.
