8 oz. Sausage
4 c. stuffing (cubed or crumbled) - Mom preferred Pepperidge Farm Herb Seasoned using 2 c. crumbled with 2 c. cubed
2 oz. bacon or pancetta
1 medium onion diced
2 small ribs of celery
1/4 c. half and half
1/4 c. fresh grated Parmesan (Mom bought the already grated)
1 tsp. rosemary
1 tbsp. sage* (Mom usually bought the sage sausage and omitted this ingredient)
Chicken Broth - use as much as needed to make it as dry or moist as you like. (Mom used roughly 24 oz. per recipe.

Cook sausage, onion, celery, rosemary and sage* in skillet. Add (including grease) to stuffing cubes/crumbles. Then stir in half and half, precooked bacon (crumbled) or pancetta and Parmesan. Add chicken broth to desired moistness and mix with your hands. Then place in baking dish. Bake covered at 350 degrees for 40 minutes. Remove the cover for the last 5-10 minutes. If you double the batch cooking time will need to be increased.
