4 cups whole wheat flour
1/2 cup nonfat dry milk powder
1 tbsp. salt
2 pkg. active dry yeast
3 cup water
1/2 cup honey
2 tbsp. oil
3 1/2 to 4 cups all purpose flour (I use bread flour)

ADD: (these will be added with the wheat flour)
I/4 toasted wheat germ
1/4 flaxseed meal

Directions:
In large mixer bowl, combine 3 cups of the whole wheat flour, the dry milk powder, salt and yeast; mix well.
Heat together water, oil, and honey until warm (115º to 120º). ,
Add warm liquid to whole wheat flour mixture in bowl; beat at low speed of electric mixer for 1/2 minute, scraping sides of bowl constantly. Beat at a medium speed for 3 minutes,
By hand, stir in remaining whole wheat flour and enough of the all purpose flour to make a moderately stiff dough.

Turn our onto floured surface and knead for about 5 minutes.
Place in a greased bowl, turning once to grease surface; cover and let rise in a warm place until doubled. 45 to 60 minutes.
Punch down.
Divide dough in half.
Cover and let rest 10 minutes.
Shape into loaves. Place each in a greased 9 x 5 x 3 loaf pan. Cover let rise until doubled, 30 to 45 minutes. Bake in 375º oven for 30 to 35 minutes.
