4 eggs separated
1 C sugar
1 tsp. vanilla
2 TBSP. lemon juice
3 TBSP cold water.
! TBSP cornstarch
1/4 tsp. salt
1/4 tsp. baking powder and flour to make one cup.

Directions:
Beat egg whites stiff. Set aside. Add yolks, sugar vanilla, lemon juice and water to mixer bowl. mix well. In 1 C measuring cup, add cornstarch, salt, baking powder and enough flour to make up 1 C. Ad flour mixture to egg/sugar mixture. Fold in egg whites. Line jelly roll pan with parchment or wax paper (or line 2 8 or 9" cake pans). Spread mixture over paper and bakek 375º for 12 - 15 minutes. If making roll, immediately after removing from oven, sprinkle XXXX sugar on kitchen tea towel. Place baked sheet onto towel and remove waxed paper. Roll loosely inside towel to give jelly roll shape. When cool, carefully unroll, add filling and re-roll.
