4 Boneless Chicken Breasts
2 Tablespoons of Dijon Mustard
1/2 cup Burgundy Wine or Dry Red Wine
2 cups fresh mushrooms, any style, sliced
1 teaspoon thyme
1 teaspoon soy sauce

Directions:
Directions:
Coat raw chicken with dijon and set aside. Spray a non stick pan with vegetable coating and sauté sliced mushrooms for 3-5 minutes. Remove and set aside. In the same pan, place coated chicken and cook for 5 minutes browning each side. Set aside. Add wine, thyme and soy sauce to the pan, loosening dijon in pan to add flavor to sauce. Add mushrooms and chicken to pan, simmer until cooked.
