For peach cobbler:
6-8 ripe peaches, evenly sliced
1/4 c. brown sugar
1/4 c. sugar
1/4 tsp. cinnamon
1/8 tsp nutmeg
1 tsp lemon juice
2-3 TBSP cornstarch (adjust according to how juicy the peaches are)
FOR BISCUIT-LIKE TOPPING:
1 cup flour
1/4 c. sugar
1/4 c. brown sugar
1 tsp baking powder
1/2 tsp salt
6 TBSP butter
1/4 c. boiling water
CINNAMON TOPPING:
3 TBSP sugar
1 tsp cinnamon

Directions:
Directions:
1) Mix all cobbler ingredients together in a large bowl (top 7 ingredients).
2) Bake at 425 degrees for 10 minutes and remove from oven & reduce oven temperature to 350 degrees.
3) While peaches are baking, stir together first 5 ingredients for the biscuit-like topping. Cut in the butter. Then add the boiling water and stir just till combined.
4) Place spoonful's of batter in mounds on top of the peaches.
5) Sprinkle the cinnamon/sugar topping across entire top of cobbler (optional).
6) Bake at 350 degrees for approx. 20-35 min, watching closely so biscuits don't get too brown.
**NOTE: Poke peaches with a fork to make sure they are tender.

This is so good with a scoop of vanilla icecream on top!
**NOTE: You can substitute blueberries, but use 1/2 c. sugar in the berries (instead of 1/4 cup) and leave out the brown sugar, cinnamon, and nutmeg.
