Ingredients: 3 c. All purpose flour 2 c. Sugar 1 tsp. Salt 1 tsp. Soda 1 tsp. ground Cinnamon 3 beaten eggs 1 1/2 c. Salad oil 1 1/2 tsp. Vanilla 1-8 oz can crushed pineapple, UNDRAINED 2 c. Chopped pecans or walnuts, divided 2 c. Chopped bananas
Cream Cheese Frosting: 8 oz softened cream cheese 1/2 c. Softened butter 16 oz pkg powdered sugar 1 tsp. Vanilla

Directions:Preheat oven 350º Combine dry ingredients in a large bowl. Add eggs & oil , stirring until dry ingredients are moistened Do NOT beat! Stir in vanilla, pineapple, 1 cup of nuts & bananas. Spoon batter into 3 well greased & floured 9" cake pans Bake for 25 to 30 minutes or until cake tests done Cool in pans 10 minutes then remove from pans & cool completely Spread frosting between layer & sprinkle top with nuts
For frosting: combine cream cheese & butter, cream until smooth. Add powdered sugar & beat until light & fluffy. Stir in vanilla |
