6 slices bacon
1 chopped onion
3 eggs
3/4 c. Buttermilk baking mix (bisquick)
1 1/2 TB chopped fresh parsley
2 c. Shredded American cheese

Directions:
Preheat oven to 350º
Grease or spray 2 mini muffin pans.
In frying pan over medium heat, fry bacon & onions together for about 5 minutes or until bacon is crisp. Drain & set aside
In medium bowl, beat eggs. Stir in remaining ingredients, mix until well mixed. Spoon into muffin cups.
Bake for 10 to 15 minutes or until tops are lightly browned
Allow quiches to cool in pan before removing with a sharp knife
