1/2 cup oil
1 cup sugar
1 egg
1/2 tsp. salt
1/2 tsp. soda
1/2 tsp. baking powder
1 1/2 cup flour
1/2 cup applesauce
1/2 tsp. allspice
1/2 tsp. cinnamon

Directions:
Combine oil, sugar, and egg until well blended. Stir in remaining ingredients. Spoon into paper-lined or well greased muffin pan. Bake at 400º for 15-20 minutes. Makes 12

Marilyn made this often for her grandchildren (Jack and Olivia). It was one of their favorite treats and they always knew when they returned home from a trip, these muffins would be waiting on the kitchen counter.
