1 lb. bacon
1/4 c. Diced green(bell) pepper
3 c. Shredded Cheddar cheese
8 eggs
2 c. Milk
1( 16oz) pkg frozen hash brown potatoes, thawed

Directions:
Directions:
Preheat oven to 350º
Lightly grease or spray 7x11 casserole dish
Fry bacon until evenly brown & crisp , about 10 minutes
Drain on paper towel then crumble
In large bowl, beat eggs & milk.
Mix in cheese, bacon, onion, & peppers
Stir in hash browns & pour into casserole dish
Cover with aluminum foil & bake for 45 minutes.
Uncover & bake another 30 minutes or until eggs have set
