4 russet potatoes, sliced into 1/4 " slices
1 onion, sliced into thin rings
Salt & pepper to taste
3 TB butter
3TB flour
1/2 tsp salt
2 c. Milk
1 1/2 c. Shredded Cheddar Cheese

Directions:

Preheat oven to 400º
Butter a qt casserole dish
Layer half the potatoes into bottom of dish.
Top with onion slices, then add remaining potatoes
Season with S & P
In medium saucepan, melt butter then add flour & salt & whisk constantly for one minute.
Stir in milk & cook until mixture has thickened.
Stir in cheese all at once & continue stirring until melted. - about 30 to 60 seconds
Pour over potatoes & cover dish with aluminum foil
Bake for 1 1/2 hours
