Planked Salmon with Mustard Mayonnaise Sauce Recipe

Ingredients: 1 - 2 3/4 - 3 pound side of salmon, pin bones and skin removed.
1 seasoned pine plank
MARINADE: 1/2 c. grainy Dijon mustard 1/4 c. dry white wine 1 tbsp finely minced garlic 1 tbsp freshly ground pepper 2 tbsp chopped fresh chives 2 tbsp chopped fresh tarragon 1 tbsp chopped fresh parsley 1 tsp salt 1/4 c minced raw bacon (I microwave for about 1 minute)
SAUCE 1 c mayonnaise 1 1/2 tbsp Dijon mustard 1 tbsp fresh lemon juice 1 tbsp freshly ground pepper
NOTE: You may use a baking pan instead of a seasoned pan, but the fish won't pick up the smoky flavor.

Directions:Preheat oven to 450º or start grill with indirect heat source
Mix the marinade ingredients (except the salt and bacon) until smooth. Spread evenly on both sides of the salmon, make the coating thick. Season with 1 teaspoon salt.
Scatter half of the bacon over the pine plank or baking dish in the area where the salmon will be placed. Place the salmon on the bacon and sprinkle the top with remaining bacon. If using the plank, place on a flat cookie sheet and bake for 25 minutes. If using the grill, place plank directly on rack and bake for 25 minutes.
Combine all sauce ingredients in a small bowl. Serve the salmon on its plank. Pass the mustard mayonnaise sauce separately. |
