2-2 ½ lbs zucchini
4 tbsp oil or margarine
½ cup chopped onions
½ cup chopped peppers
4 oz can mushrooms
5 oz can tomato paste
1 cup water
4 oz shredded cheddar cheese
1 pkg spaghetti sauce mix
Parmesan cheese

Directions:
Directions:
Slice zucchini into ½” pieces and put in boiling water. Boil 4-5 minutes. Drain. Place in a baking dish. Saute onion, green pepper in oil or margarine. Add spaghetti sauce, cheddar cheese, mushrooms, tomato paste and water. Mix well and pour over zucchini. Sprinkle top with parmesan cheese. Bake at 350 degrees oven about 25-30 minutes.
