1 egg beaten
3 Tbl. salad oil
1/2 cup diced cooked shrimp, ham, pork or beef.....your choice
3 green onion, thinly sliced, the whole thing.....I like the green parts best...nice color
2 cups cold cooked rice
1/2 cup frozen peas and carrots (adds some nutrients and color)!
2 Tbls. soy sauce

Fry beaten egg until firm, in oil, remove from heat and shred,
Combine all ingredients in a medium saucepan.
Heat and serve.
Add soy sauce to taste!

Obviously this isn't fried. If you prefer, you can combine ingredients in a skillet with hot oil and brown it. Why? If you are making this to serve with Chow Mein........you will have enough flavor from the chow mein!
Add soy sauce to your taste!!
