1 cup chopped onion
1 cup diced pepper
¼ cup diced pimento
¼ cup olive oil
1 tbsp flour
1 can (16 oz) tomatoes
2 cups sliced carrots
1 tbsp salt
1 lb lentils
8 cups water


Directions:
Directions:
In Dutch oven, simmer onion, green pepper and pimento in olive oil until very soft. Stir in flour, cook until bubbling but do not brown. Add tomatoes, carrots, celery, salt and water. (lentils should not be soaked) Simmer, covered for about 2 hours.
