2 lbs. Fresh Okra - I have used frozen sliced okra that has been thawed. Be sure to pat the excess water off of the okra.
1 C. Buttermilk
1 1/2 C. Flour
3/4 C. Yellow Cornmeal
4 tsp. Season Salt
1 T. Cornstarch
Peanut Oil

In a large cast iron skillet, pour oil to a depth of 2".
Heat oil unitl very hot - 350º.

In a large bowl, combine okra and buttermilk. Let stand for 15 minutes.
In a medium bowl, whisk together flour, cornmeal, season salt, and cornstarch.

Working in batches, drain the okra and dredge in the flour mixture.
Using a spider skimmer, or a large slotted metal spoon, lower the okra into the hot oil.
Fry for about 4 minutes or until golden braow.
