1 lb ground beef
1 egg slightly beaten
2 Tbsp parsley - fresh if you have it - dried is ok
1 cup bread crumbs
1 small onion – finely diced (omit if making miniature meatballs)
3 cloves finely chopped garlic
½ cup Parmesan cheese
1 teaspoon each salt and pepper
2 tablespoons (approx) water
Pam Spray (olive oil)

Directions:
Directions:
1. Mix all ingredients and roll into approximately 1 ½ to 2” diameter balls (should yield 10 to 12). For use in soups such as Italian Wedding Soup or Minestrone, omit the onion, and roll into ½ “ balls (approximately 100).

2. Bake on Pam-sprayed shallow baking dish or cookie sheet at 350 degrees for 20 minutes (this is a concession to modern nutrition – original childhood memories are of meatballs simmering in olive oil on a Sunday morning. Not to worry. The next step infuses most of the original flavor).

3. Add to your favorite pasta sauce and simmer for 1 hour (or freeze for future use).
