4 large potatoes
1 small onion
1 tbsp flour
1 tbsp vinegar
4 eggs
2 tsp chopped parsley (optional)

oil for frying ( approx 1/4 cup )
Directions:
Directions:
Grate potatoes and onion. Let sit for a few minutes. Drain off water.

Add salt,flour,vinegar, parsley and eggs. Mix

Fry in hot oil until brown.

Serve with sour cream or apple sauce.
