Scottish Shortbread Recipe

1 lb butter, room temperature
3 C white flour
2 C rice flour
1 C sugar
1 tsp salt

Directions:
Directions:
Preheat oven to 325°F. for 20 minutes.
Sift or evenly blend white & rice flours in large bowl (I use a whisk)
Add sugar, blend again.
Cut up butter into small pieces and add to flour/sugar mixture.
With your hands, knead everything together until a smooth consistency is formed (you'll think it will never happen but all of a sudden the warmth from your hands will do the trick!)
Press evenly into a 13 x 9 brownie pan.
Prick all the way through with a fork at close intervals.
Bake at 325°F for 20 or 45 minutes until light brown on edges..
Cut into squares while hot and let cool completely before removing from pan. If you don't eat it all the first day, it keeps for several weeks in a tightly closed container.
