1/4 lb butter (one stick)
1 c carrots, diced
1 c onion, diced
1 c celery, diced
1 Qt chicken soup base or stock
3 C corn
1 lb bacon, chopped ham or chicken
1 qt half and half
1/2 tsp. nutmeg, optional

Directions:
Directions:
Melt butter in a stockpot
Add diced carrots, celery and onion. Stir until browned.
Stir in 1/2 C flour, make roux, brown. Set mix aside.
In separate saucepan, heat soup base, corn and bring to a boil.
Add to roux in stockpot.
add 1 lb meat: browned chopped bacon, or leftover cubed ham or chicken
In saucepan, warm half and half, add to soup.
season with salt and pepper to taste, and nutmeg.
