3 cups flour
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon baking powder
3 eggs
3 cups shredded, peeled cooking apples (about 5-6 medium)
2 cups sugar
2/3 cup vegetable oil
1 teaspoon vanilla
1/2 cup toffee bits

Preheat oven to 325. Grease and flour two 8 x 4 x 2 inch loaf pans. Set aside. In a medium bowl, combine the flour, baking soda, salt, cinnamon, and baking powder; set aside.
In a large bowl, beat the eggs; stir in apples, sugar, oil and vanilla. Stir into flour mixture just until moistened. Pour into prepared pans. Bake for 50 to 55 minutes or until bread tests done. Cool in pans on wire racks for 10 minutes. Remove from pans. Cool on wire racks. Wrap in foil; store overnight before slicing.
