1 recipe pâte brisée.

1/2 cup (1 stick) unsalted butter

3 eggs at room temperature

1/4 cup buttermilk

1/2 teaspoon pure vanilla extract

2 tablespoons all-purpose flour

1 3/4 cups sugar

1/2 teaspoon salt

1. Pre-heat the oven to 350º F.

2. Flour a board or wax paper. Using a floured rolling pin, roll the pastry out 1/8 inch thick or less and at least 1 1/2 to 2 inches larger than your tart pan. Fold the round into quarters. Place the pastry in a 9 inch tart pan and unfold. Press the pastry into the tart pan and trim the edges. Place the shell in the freezer or the refrigerator for 30 minutes before baking.

3. In a medium mixing bowl, mix the butter and eggs together, until well combined. Add the buttermilk and vanilla and mix well. Combine the flour, sugar and salt in a separate bowl, then stir into the liquid. Pour the filling into the unbaked tart crust and bake until set and lightly browned, 40 to 45 minutes. Let cool to room temperature on a rack. Serve warm, at room temperature, or chilled.
