1 20 oz. can crushed pineapple (undrained)
2 c. flour
1 c. brown sugar
1 c. granulated sugar
2 tsp. baking soda
1 c. chopped walnuts

Cream Cheese Ginger Frosting
1 3 oz. package of softened cream cheese
1/4 c. butter or margarine
1 tsp. vanilla
2 c. powdered sugar
1/2 tsp. ground ginger

Directions:

In a large mixing bowl beat 2 eggs until they are light and fluffy. Add the pineapple, flour brown sugar, granulated sugar and baking soda. Mix these ingredients well by hand. (If you use an electric mixer, too much air gets beaten in and there's a very good chance that the cake will fall.) Then stir in the walnuts and spread the contents of the bowl evenly in an ungreased 13x9x2 baking pan.
Bake in a 350 degree oven for 45 to 50 minutes, or until a toothpick comes out clean. After the cake cools, cover it with a cream cheese ginger frosting, then sprinkle with additional walnuts.
Frosting
In a small mixing bowl beat together softened cream cheese, the butter, and vanilla. Then gradually add the powdered sugar and ginger. Continue beating until the consistency is right.
