Ingredients: 1 lb. ground beef (93% lean) 2 8 oz. cans tomato sauce 1 small onion, chopped (about 1/4 c.) 1/2 tsp. dried oregano 1 tsp. basil 3/4 tsp. salt + 1/4 tsp. 1/4 tsp. pepper A few dashes of Tabasco to taste 2 10 oz. packages frozen chopped spinach, thawed 1 pt. cottage cheese 1 8 oz. package mozzarella cheese slices

Directions:Sauté onion in skillet over medium high heat. Add in beef, breaking up into pieces with a large fork or back of a wooden spoon, cook until browned. Stir in tomato sauce, 3/4 tsp. of salt, all the spices and tabasco. Simmer uncovered ten minutes. Squeeze most of the water from the thawed spinach. Add to a medium bowl and combine with 1/4 tsp. salt and the cottage cheese. Spray a 9x13 baking dish with cooking spray and then spoon spinach/cottage cheese mixture around the edges leaving the middle rectangle open. Pour beef mixture in the middle. Cut each mozzarella cheese slice into strips and then arrange in a lattice pattern over the meat. Bake at 375 degrees for 20 minutes. |
