1/2 cup butter
1/2 cup all flour
1 teaspoon salt
1/2 teaspoon pepper
2 cup rich chicken stock, seasoned to taste
2 cups chopped cooked chicken

Directions:
Directions:
In a skillet, melt butter and stir in flour to form a smooth paste. Warm the chicken broth and gradually add it to the flour mixture; bring to a boil.
Reduce heat; cook and stir for 1-2 minutes or until thickened. Stir in chicken, heat thoroughly.

Pour chicken mixture in greased 9x13 pan or glass casserole.

Prepare baking powder biscuits (See Maudie Fluherer's recipe, or prepare Bisquick biscuits according to package directions.) Drop generous tablespoon of batter on top of chicken in 4 rows or 3 biscuits.

Bake at 400º for 20 minutes until biscuits are golden. Gently lift the biscuit to check underside to insure that it is not doughy or under-baked.

Serve piping hot!

On the third Wednesday in September, the Hector United Methodist Church hosts their annual "Chicken Pie Supper". Since 1980, the entire congregation comes together to prepare a home cooked feast for over 800 people. Grandma Olson helped in the kitchen, Howard peeled and mashed potatoes, and Alice continues to help in too many ways to mention. The meal is served family-style and consists of all-you-can-eat chicken & biscuits, "real" mashed potatoes made with cream and butter, gravy, homemade baked beans, coleslaw, fresh bread, garden tomatoes, and your choice of pie for dessert! It takes over 450 pounds of potatoes, 90 gallons of broth for gravy, and 80 pounds of beans to serve the hungry crowd!
