1 quart of buttermilk
2 sweet onions, sliced 1/2-inch thick and separated into rings
1 cup all-purpose flour
1 tablespoon Creole Seasoning
1 1/2 cups Panko*
1/2 cup grated Parmesan
2 large eggs, beaten

Slice onions and soak in buttermilk overnight

Preheat oven to 400 degrees. Lightly oil a baking sheet or coat with nonstick spray.
In a large bowl, combine flour and Creole Seasoning set aside.
In a large bowl, combine Panko and Parmesan; set aside.
Working in batches, dredge onion rings in flour mixture, dip into eggs, then dredge in Panko mixture, pressing to coat.
Spread onion rings in an even layer on the prepared baking sheet; coat with nonstick spray. Place into oven and bake until golden brown and crispy, about 20-25 minutes.
Serve immediately.

Panko is a Japanese-style breadcrumb and can be found in the Asian section of your local grocery store.
Buttermilk recipe :combine 1/4 cup vinegar and any milk (1%, 2% or whole)
until it reaches one quart. Stir and let sit for 5 mins. The homemade milk will be somewhat curdled and ready to use.
