1/3 c good quality vinegar (balsamic, red wine, white wine, apple cider)
1 tsp salt
1 garlic clove, minced, or
3 TBS minced shallot
1 cup flavorful olive oil or nut oil (hazelnut or walnut), or a combo of the two

Directions:

1. Combine the vinegar, salt, and garlic in a 16 ounce mason or other jar and shake until all the salt has dissolved. Add the oil and shake and shake again.
2. Taste test and adjust. Vinaigrette will keep, tightly covered, in the fridge for up to 1 week.

Add chopped fresh herbs like chives, basil, tarragon, or parsley.
Add a dollop of Dijon mustard and a drizzle of honey.
Replace vinegar with lemon or lime juice.
Mark a Mason jar with the lines for acid and oil so you never need measure again.
