1 tsp. salt

1 1/4 warm water

In a mixing bowl, combine flour, salt, egg and warm water. If using a mixer with dough hook, knead for 3 minutes (5 to 7 minutes by hand) adding a little more flour carefully so the dough comes away from the bowl or your hands and is smooth and shiny. Transfer to a floured surface and knead and shape into a ball. Place on floured surface, lightly brush top with oil and cover with a cloth.
Sprinkle kitchen table with flour. Place dough in center of table. Roll out to approx. 10" diameter and brush with oil. Begin to stretch dough toward edges of table. Put your hands (not just fingers) under dough and carefully pull the dough toward yourself. Work around the dough pulling and stretching until dough is translucent and covers the table. Starting at one end, flip dough into a long strip. Cut into approx. 4" strips.
In a cast iron pot or roaster, fry up some bacon, onions and potatoes and salt for seasoning. Once browned, add enough boiling water to cover the potatoes. Push the potatoes toward the center and put the strudel around the edges and then on top of the potatoes in an even layer. Cover with lid and place in preheated oven at 350ºF for approx. 1 hour. Don't lift the lid off while cooking. If you can kind of hear it sizzling, its done. Serve with goulash and red beets. 1 ball makes 10-12 strudel.
