1 onion
1 large clove garlic, smashed
1 sm. zuchinni, diced
1 carrot, diced
1 large can of diced tomatoes with green pepper and onion
1 pkg of HEB already- cooked breast meat fajitas
2 boxes of chicken broth
1 cup rice
2 t. cumin
2 t. chili powder
1/3 cup fresh cilantro, chopped

Directions:
Directions:
Pour 2-3 tablespoons of oil in bottom of stock pot and sauté onion and garlic until onion is just turning brown. Pour broth in stock pot with all vegetables and rice. Simmer covered on medium heat for 20 minutes. Chop fajitas into smaller bite-size pieces and add to soup. Add tomatoes, spices and cilantro. Simmer a few more minutes. Serve with crisp tortilla chips, sour cream, avocados and shredded cheese.
