4 Chicken Breasts, split until 1/8" thick, pound with mallet until thin
2 T. Olive Oil
1 Carton Sliced Mushrooms, rinsed and patted dry
1/2 Jar Capers
2 Lemons , sliced
Flour
2 Green Onions, chopped fine
2 Cloves Garlic, sliced
Salt and Pepper
1 Cup White Wine
1 C. Chicken Broth

Directions:
Directions:
Lightly coat each chicken piece in the flour
Heat the oil in a large skillet and add chicken pieces one at a time Cook over medium heat.
Do not overload the chicken in the pan. You will need to cook several batched.
Remove chicken forom the pan when lightly browned.
Once the chicken is cooked and removed from the pan, add 2 T. flour and stir in the drippings. (you may need to add additional butter in order to make a roux). Add the green onions, capers, lemon juice, and slat and pepper..
Cook until thick liquids have thickened slightly.
Add the chicken pieces and cover to cook on low for 20-25 minutes or until the chicken is done.
Serve over pasta - penne or spaghetti.
