2 whole bone-in, skin-on chicken breasts
(about 1 1/2 # each)
Salt and freshly ground pepper
Seasonings of choice

Directions:
1. Pat the chicken dry with paper towels and sprinkle each with 1/2 tsp salt.
2. Preheat oven to 450º and position the rack in the middle.
3. Pat the chicken dry again and sprinkle with pepper and seasonings. Set on baking tray skin side up. Drizzle with olive oil or butter.
4. Roast until juices run clear or until meat thermometer in thickest part reaches 160º, 35 to 45 minutes. Transfer chicken to cutting board and let it rest for 5 minutes. Cut each breast through the middle from top to bottom, then crosswise into halves or thirds.

Try to salt the chicken early in the day or the night before.
Try finely chopped garlic, lemon zest, thyme.
Try finely chopped garlic, rosemary, and sage.
Roast chicken on bed of thinly sliced potatoes or sweet potatoes.
Roast chicken on a bed of thinly sliced onions, olives, and sliced lemons drizzled with olive oil.
After roasting rub with herb butter.
