1 C vegetable oil
1 1/2 C sugar
3 eggs
6 C old fashioned (rolled) oats
1 1/2 T baking powder
1 tsp salt
21/4 C milk
1/4 C chopped walnuts/raisins, opt

Mix, pour in greased pan….for large batch I use a 9 x 13 glass dish…bake in 350 oven for about 30 minutes till slightly soft and browned. Keep unused portion in refrigerator, and microwave as needed. I make large batch and reheat individual portions all week.

This recipe can be modified in many ways. I substitute applesauce for some of the oil, substitute or reduce some of the sugar, add leftover cereals or cookie crumbs, and always add fruit and nuts: usually raisins or craisins and walnuts, often flax seed as well. I may add cinnamon and a little nutmeg.

Great to lower cholesterol, and holds you over until lunch, no snacking needed!

I hate oatmeal. gunky, sticky bland oatmeal. I LOVE this recipe which was used at summer camp or retreats at Camp Asbury in Perry, NY. It is a winter staple in our house: great to grab, nuke, and go! As my friend Beth says, what's not to like? It's like eating an oatmeal cookie!
