2 cups uncoooked Orzo
1 onion, chopped
1 tablespoon olive oil
3 tablespoons chicken broth
1/4 cup lemon juice
1/4 cup minced parsley
2 cups cherry tomatoes, halved
1/3 cup fresh mint leaves, minced
salt and pepper to taste

Directions:
Directions:
Cook orzo according to package directions, rinse with cold water, drain well and place in large bowl. Heat oil in large skillet over medium-high heat; saute onion until tender, stirring frequently until browned, about 15 minutes. In a large bowl, toss orzo with onion, broth, lemon juice and parsley. Cover and chill if making ahead of time, bring to room temperature before serving, stir in tomatoes and mint, season with salt and pepper.
