2 natural boneless/skinless chicken breasts, 6-8 oz. each
1 Tbsp. plain non-fat yogurt
1 Tbsp. light mayonaise
1 tsp. light ranch dressing, as needed for thinning
1/4 c Kikkoman Panko Japanese Style Bread Crumbs
2 Tbsp. finely shredded Parmesan cheese
spices (basil, garlic powder, Italian seasoning) to taste

Spray bottom of glass baking dish with Pam.

In a flat bowl, mix yogurt and mayonnaise; thin mixture slightly with ranch dressing.

In a second flat bowl, combine Panko, Parmesan cheese, basil. garlic powder and Italian seasoning.

Salt and pepper both sides of chicken breasts.

Dip chicken breasts first in the yogurt mixture to coat well. Then dip breasts in the Panko mixture and coat all sides thoroughly.

Place breasts in prepared glass baking dish. Bake in 400 º oven, 20-30 minutes, or until meat thermometer reads 165 º.

Let chicken rest for 5 to 10 minutes before serving.
