Ingredients:

1 large can crushed or diced tomatoes
5 chopped beets
1 c chopped beet tops
5-7 carrots
1 c frozen young peas
1 chopped onion
2 c green &/or yellow beans (I like 1 c of each)
2 tbsp (or more) chopped fresh dill (to flavour)
4 c vegetable broth
water (2 c or so) to cover vegetables
salt to taste
4 c whipping cream
2 tbsp flour

Directions:
Directions:
Combine all ingredients, except the cream and flour, into a large pot and bring to a boil. Cover and cook until tender, about 20-30 min. Combine the whipping cream with the flour and mix well. Add to the soup and bring to a boil. Cool and put into containers. Makes about 5 one litre containers. Freezes well. Add about 1-2 tbsp sour cream just before serving. Enjoy!
