1lb.string beans
2lbs. lamb shoulder cut into pieces (very hard to find the lamb neck we liked)
salt and pepper to taste
1/2 stick butter
1 8 oz. can tomato sauce
2 cups water

Vegetarian version..........use large chunks of potatoes in place of meat.

Directions:

String and cut beans (okay, you know I always used canned french cut)
Trim excess fat from meat and season. Brown meat in butter and then transfer to pot.
Add tomato sauce and 2 cups water. Bring to boil. Simmer for 1/2 hour. Add beans and cook slowly until done to your taste.

If you use potatoes instead of lamb, cook potatoesa while before adding beans.

If you use canned beans, drain them before adding, or use less water.

20 minutes!! Cook time.......about 1 hour if you are using meat, less for potatoes, of course!!
