1 tbsp. Melted Butter
1/2 Medium Onion, chopped
1/4 C. Melted Butter
1/4 C. Flour
2 C. Half-and-Half
2 C. Chicken Stock
1/2 lb. Fresh Broccoli - about 3 C.
1 C. julienned carrots
1/4 tsp. Nutmeg
8 oz. Sharp Cheese, grated
Salt and Pepper

Directions:
Directions:
Sauté onion in 1 T. butter.
Cook the 1/4 C. melted butter and flour using a whisk for 2-3 minutes.
Stirring constantly, and the half-and-half.
Add the chicken broth and simmer about 10 minutes.
Add the broccoli, carrots, and onions.
Cook over low heat 20-25 minutes.
Add the salt and pepper.
You can leave the soup chunky or blend about 1 C. of soup and stir it in for a smoother soup.
Return to the heat and add the cheese on low heat. stir in the nutmeg.
